There are restaurants, and then there is Sublimotion. I’ve designed enough spaces in my life to know when a room is trying to tell you a story, but nothing quite prepared me for an evening where the entire meal is the story.

Tucked inside BLESS Ibiza The Site, Sublimotion is the brainchild of Michelin two star chef Paco Roncero, and it’s less a dinner reservation and more a ticket to a production. Twelve guests. One table. A team of chefs, magicians, projection artists, and servers who move through the room like they’re choreographed, because they are.

The experience

It starts before you even sit down. You walk through a corridor that feels like walking through history itself, a kind of sensory prologue before the meal even begins. Then the walls stop being walls. Over the course of the night, the room shape shifts through wildly different worlds: a circus complete with carnival details on the table, a science lab where your drinks arrive as potions, a full disco moment that turns dinner into a dance floor. There’s even a VR component at one point that I genuinely can’t do justice to in words. You have to experience it yourself.

Each of the roughly 20 courses arrives as its own mini theatrical moment. Things descend from the ceiling mid course. An old rubber shoe turns into part of the meal. Performers weave through the room as the walls shift around you. It’s molecular gastronomy meets sleight of hand meets full set design, and as a designer, I was taking mental notes the whole night, studying how they used light, texture, and spatial storytelling to completely disorient your sense of “restaurant.”

The food itself holds its own against the spectacle. Expect the unexpected: dishes built to surprise your palate as much as your eyes, with seafood and Spanish flavors woven through an otherwise avant garde menu. It’s playful without losing sophistication, and every plate feels engineered for a reaction.

The honest parts

This is, by most accounts, one of the most expensive dining experiences in the world, with pricing well north of what you’d expect for even Ibiza’s top tables. It’s a splurge, full stop, and I’d frame it that way to anyone considering it: a once a trip experience rather than a regular reservation. Book well ahead, since seating is intentionally tiny, and plan your transportation home in advance. Cabs in high season on this island are notoriously hard to flag down, and you don’t want a €1,000+ evening to end with you stranded curbside.

Who it’s for

If you’re celebrating something, an anniversary, a milestone birthday, a “we made it” kind of night, Sublimotion is exactly the kind of immersive, over the top experience that earns its place in the memory books. It’s not a casual family dinner (my boys are wonderful, but this is a grown up night out), and it’s not for anyone who wants a quiet conversation over food. It’s theater. It’s spectacle. It’s Ibiza at its most audacious.

Would I go back? In a heartbeat, if only to see what story they’re telling next season.
